FFmpeg should do what you need. It can stream and convert many codecs and containters (formats.)

FFmpeg - Wikipedia, the free encyclopedia

If you use Ubuntu there's a GUI application in the repos called SoundConverter. It's a GTK app, should do what you need.

Yeah, forget about SoundConverter, I dunno why I said that, guess I wasn't thinking clearly. But ffmpeg should get you sorted, it does all types of video and audio formats.

If that still doesn't help you could try #linux on Freenode... somebody there would probably be able to help you with a specific format.

Spleblem, what flavor of Linux are you running, and what windows manager / DE are you using (KDE, Gnome, FCE, etc.)? I have script that I wrote, using Zenity for the GUI, and ffmpeg as the encoder, that allows me to tweak the conversion fairly well. My videos seem to come out well. It is written for Gnome, but I'll bet it works in KDE also.

*EDIT - my bad. I didn't notice that your post is over a month old. Guess you've already found your solution by now. Sorry for resurrecting.
