If i've recently come across a PSP-1000 with near release date OFW (1.20), what CFW should I be shooting for, for maximum compatability with PSP and PS1 games?

are you into serious hacking and do a lot of experimenting?
if yes, upgrade to 6.39 (6.60 is latest and next update buy there is no difference except more security) and install ME-9:
download and follow the guide from here:
PSP Custom Firmware 6.39 ME-9, PSP Hacks - PSP Slim Hacks
there is 6.60 me 1.6 but it is less stable compared to the above,
make sure you download the full version, not lite,
and watch this video on full instructions:

if all your a basic man and just want to play ISO games install 6.60 PRO b10,
you can update it in settings > system update > via wifi, or use this method:
    PSP® PC Update | System Updates | Support -
    download the hack from here:
    660PRO-B10.fix1.rar - procfw - 6.60 PRO-B10.fix1 - X-Generation Aftermarket Firmware for Playstation Portable
    and watch this video:

    hope that helped
